Our table is born from a precise vision: respect for Nature, for Animals, for the Land and for the truth of simple things. For this reason, we offer a cuisine able to welcome different sensitivities, with particular attention to vegetarian and vegan paths, also gluten-free and lactose-free, while still embracing traditional Umbrian cooking with meat dishes and peasant recipes that belong to the most authentic history of this land.

We believe in a conscious balance, far from both intensive production and any form of ideological rigidity. When we choose to bring traditional dishes to the table, we do so with care, moderation and responsibility, favouring small local producers, zero-kilometre realities and many small businesses in the area that still preserve a human, respectful and non-industrial relationship with animals and with the land. It is a cuisine rooted in the rural culture of Umbria, in its peasant and pastoral civilisation, and it has nothing to do with the intensive and depersonalised logic of mass farming.

At the Borgo we deeply love animals and nature, and we also believe that this love must be translated into conscience, respect, common sense and awareness that in Nature there is a food chain made of “animal eating animal”.... all this simply means that we welcome only people endowed with good sense and that our home, serenely, is not open to extremist animal-rights activists, often only from behind a keyboard; they are instead invited to sign up as volunteers to experience the animal world in order to know it concretely, while remembering that food habits should be a quiet choice, equally respectful of those of others.

For us, approaching animals means approaching a more authentic, spiritual and harmonious dimension of existence, and we are certain that at the Borgo you will perceive all of this.
